When you want to use blocks in Gutenberg for clients AND you do NOT want a client to edit a specific element inside the block.
- For instance, a title or image layout.
Create a CSS class for that element and put pointer-events: none;
. Works like a charm! Thanks to Roberto Porcar who told me this (he got it from FB somewhere). This is hilarious!
